Ingredients:

1 vegetable stock cube

500g courgettes
-
120g frozen peas
Instructions:
Top and tail the courgettes and cut into noodles using a spiralizer or sharp knife.
Bring a medium-sized saucepan of water to the boil and add the stock cube, stir until dissolved, Add the peas and the courgette noodles and bring back to the boil. Cook for 2-3 minutes, then remove from the heat, drain and serve straight away.
