Instructions:
Set aside a couple of strawberry’s for the topping and place the rest in a small saucepan with the honey and a tbsp. of water.   Gently bring to a medium heat ( do not allow to boil) and cook for 3-5 minutes until the strawberries have collapsed, using a wooden spoon mash them until a rough puree has been achieved. Set aside and leave to cool for 20 minutes

In another bowl add the yogurt, cream cheese and vanilla essence.  Mix together until smooth.

Place the biscuit in a blender, and blend until breadcrumb like in consistency.

Take a glass tumbler, place the crumbed biscuit in the bottom, then top with half of the cream cheese mixture.  Top the cream cheese mixture with half of the strawberry sauce. Repeat the process with the remaining cream cheese mixture and the finally the last of the strawberry sauce.   

Decorate with the strawberries.

Chill for 15 - 20 minutes before serving

• a small handful of very ripe strawberries
• 1tsp honey
• 1 tbsp Greek yogurt
• 1 tbsp low fat plain cream cheese
• dash of vanilla essence (optional)
• 1 digestive biscuit- why not swap for a chocolate biscuit as an alternative!
