Citrus Baked Fish
Preheat the oven to 190C, 375F, Gas Mark 5
Place the fish fillets into an ovenproof ceramic dish. Cover the fish with the lemon and lime juice, lemon zest and season with the black pepper.
Top each piece of fish with 5g of butter.
Cover the dish in foil (shiny side down) and place into the oven.
Bake in the oven for 20 minutes or until the cod is opaque but still moist.
To serve, place the fish on warmed serving plates. Pour over any of the remaining cooking juices and top with the fresh herbs and flaked salt.
