Place the black pudding into a food processor and blitz until it resembles a breadcrumb texture.


Transfer the black pudding crumb to a mixing bowl and add the other ingredients.  Mix all of the ingredients together, cover in clingfilm and let it rest for 30 minutes or overnight in the fridge.


Divide the mixture into four equal quantities and shape them into sausage shapes.  Slide a skewer up through the middle.


Pre-heat a griddle pan or grill to hot.  Cook the kebabs on one side for 5 minutes then carefully turn over and cook for a further 4 minutes.


Serve straight away

  • 1 small onion, peeled and grated

  • 1 tsp ground cumin

  • ½ tsp paprika

  • pinch of cayenne pepper

  • pinch of salt

  • pinch of black pepper
