Apple and Almond Cake

Instructions:
Preheat the oven to 170C, 325F, Gas Mark 3.
Peel the apples, core and dice into cm cubes, and sprinkle on to the bottom of a 20cm silicone round sandwich mould (if using a metal tin, line with baking parchment).
Mix together the apple puree with the sugar, 2 beaten eggs, self raising flour, ground almonds and almond essence in a mixing bowl, then pour over the diced apples.
Bake in the oven for 20-25 minutes, until risen and golden in colour.
Allow to cool slightly, before turning out. Serve warm or cold
TIP: swap the flour to gluten free flour if you are following a gluten free lifestyle
