Almond and raisin rice pudding
Pre-heat the oven to 150C, 300F, Gas mark 2.
Rinse the rice in water and drain well.
Place the rice, raisins, almonds and sugar into an ovenproof dish (approx. 550ml in size) and stir in the milk. Sprinkle the nutmeg over the top.
Place in the oven and cook for 1 ¾ - 2 hours, or until the rice pudding wobbles slightly when gently shaken.
Serve hot or cold

• 25g raisins
• 400ml almond milk
• 20g chopped almonds
• 25g sugar
• 1 pinch of grated nutmeg
